For your info: a 80 Lbs. pig = 40 Lbs. when cooked as it loses (MONDONGO is really good !), but, of course, requires LOTS OF CLEANING and a Specialists ! as other parts of the Pig. <br />Next time to CLOSE UP cooking and make CHICHARRONCITO (crankly pig skin) pour VINEGAR (white or gold) over the skin (you will hear a sizzling noise !)i.
